Step by Step Instructions
- Step 1: How to make the vinaigrette. Whisk the mustard and vinegar in a bowl and mix in the oil, little by little. Add salt and pepper.
- Step 2: How to make the salad. Wash and rub the potatoes clean, boil with the skin in salted water for 20΄ until soft. Drain and set aside to cool.
- Step 3: After they have cooled down, cut in slices and mix with the rest of the herbs, apaki, caper leaves and vinaigrette.

- 15 caper leaves
- 5g fresh basil leaves - finely chopped
- 2 lemons - zest
- 150g cretan apaki pork - thinly sliced
- ground black pepper
- 20ml vinegar
- 2tbsps dijon mustard
- sea salt flakes
- 100ml extra virgin olive oil
