Step by Step Instructions
- Step 1: Prepare the filling. Put the feta cheese, the melichloro cheese, the cayenne pepper, the eggs and the mint in a bowl. Mix very well and set aside.
- Step 2: Prepare the phyllo dough. Cut the dough into 4 pieces, 5cm wide each. Take a piece of dough and put 2 tbsp of filling on one end. Start rolling the dough, starting from the sides and make "flogeres" (flutes).
- Step 3: Spread a baking pan with the olive oil and arrange the flogeres with the sealed sides at the bottom. Drizzle some water over them and bake in preheated oven at 180°C for approximately 20 minutes until they get a golden brown colour.

- 1/2tsp of hot cayenne pepper
- 1/2 bunch of fresh mint (finely chopped)
